James left school at fifteen to embark on his future career as a chef. He started his apprenticeship at the renouned Roxburghe Hotel on Charlottes Square, Edinburgh. Beginning as Commis Chef, James rapidly progressed to the level of Sous Chef, managing not to buckle under the extreme pressure demanded by such a kitchen. During this time, he also attended Edinburgh's Telford College to study for his City & Guilds - a four year undertaking. James competed in two major food competitions whilst studying at Telford College, gaining a total of three golds, one silver and one bronze awards.
In 1979 James was head hunted and appointed Executive Head Chef at the highly prestigious Café Royal. He was only 22 years of age! James held this position until 1981 when he was again head hunted, this time by Cosmo of Cosmo's Restaurant, Castle Street, Edinburgh. James was the first ever Scottish Chef to run this staunchly Italian kitchen.
James spent a highly enjoyable and memorable eight years working for Cosmo, before fulfilling his dream of opening his own restaurant - Dubh Prais.
During James' career he has cooked for Royalty, celebrities, film stars and even famous chefs!
